Description: In 2015, the sake world was surprised by the audacity of the Niizawa brewery. While the extreme limit of rice polishing was considered to be 8%, President Niizawa and his team pushed the boundaries by creating a Junmai Daiginjo with a rice polishing rate of 7%. This exceptional sake, called Zankyo, was born from a ceaseless quest for perfection. Kuranohana rice, originally from Miyagi Prefecture, is polished for more than 350 hours, a long and painstaking process that reveals the very essence of the grain. This rice is then fermented with homemade yeast, giving Zankyo a unique aromatic complexity. The result is a sake of unparalleled purity and finesse. Zankyo is characterized by a limpid and crystalline color, and a captivating nose with floral and tropical notes. On the palate, the texture is velvety and creamy, and the flavors unfold with rare elegance. The finish is long and persistent, leaving an unforgettable impression. Aromas of grapes, pears and pineapple.
